- 1 tbsp melted butter (or coconut oil for dairy-free)
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
- 1/4 tsp vanilla extract (optional)
- Pinch of salt
Instructions
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a bowl, toss pumpkin seeds with melted butter, sugar, cinnamon, vanilla, and salt until evenly coated.
- Spread the seeds in a single layer on the baking sheet.
- Roast for 20–25 minutes, stirring halfway through, until golden and caramelized.
- Cool completely before serving. Store in an airtight container for up to a week.
Notes
For extra crunch, sprinkle a little more cinnamon sugar right after baking while the seeds are still warm!
