- 1 lb (450g) ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- In a large pot, brown the ground beef over medium-high heat. Drain excess fat.
- Add onion, garlic, and bell pepper. Sauté 4–5 minutes until softened.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook 1–2 minutes to release flavors.
- Add diced tomatoes, tomato sauce, and beans. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes, stirring occasionally.
- Adjust seasoning to taste. Serve hot with optional toppings.
Notes
Simmering longer intensifies the flavor. This chili can be stored in the fridge for up to 4 days or frozen for later meals.
