  • 8 oz orzo pasta
  • 1 pint cherry tomatoes
  • 1/2 cup feta cheese block
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups chicken or vegetable broth
  • Fresh basil or parsley, for garnish

  1. Preheat oven to 400°F (200°C). In a baking dish, combine cherry tomatoes, garlic, olive oil, oregano, salt, and pepper. Place feta block in the center.
  2. Bake 25–30 minutes until tomatoes are roasted and feta is soft and slightly golden.
  3. Meanwhile, cook orzo according to package directions, drain, and set aside.
  4. Remove baking dish from oven. Mash the feta and tomatoes together until creamy.
  5. Add cooked orzo to the baking dish and stir until pasta is coated in the creamy tomato-feta mixture.
  6. Garnish with fresh basil or parsley and serve warm.

Notes

For extra flavor, drizzle a little balsamic vinegar over the roasted tomatoes before baking. You can also add spinach or roasted veggies for variation.
