- 8 oz orzo pasta
- 1 pint cherry tomatoes
- 1/2 cup feta cheese block
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups chicken or vegetable broth
- Fresh basil or parsley, for garnish

- Preheat oven to 400°F (200°C). In a baking dish, combine cherry tomatoes, garlic, olive oil, oregano, salt, and pepper. Place feta block in the center.
- Bake 25–30 minutes until tomatoes are roasted and feta is soft and slightly golden.
- Meanwhile, cook orzo according to package directions, drain, and set aside.
- Remove baking dish from oven. Mash the feta and tomatoes together until creamy.
- Add cooked orzo to the baking dish and stir until pasta is coated in the creamy tomato-feta mixture.
- Garnish with fresh basil or parsley and serve warm.
Notes
For extra flavor, drizzle a little balsamic vinegar over the roasted tomatoes before baking. You can also add spinach or roasted veggies for variation.
