  • 2 lb beef tenderloin (center-cut)
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 2 tbsp Dijon mustard
  • 12 slices prosciutto
  • 1 lb mushrooms (cremini or button), finely chopped
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme, chopped
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (egg wash)
  • Flaky sea salt, for topping

  1. Sear the beef: Season beef with salt and pepper. Heat olive oil in a skillet over high heat and sear beef on all sides until browned. Remove and brush with Dijon mustard. Let cool completely.
  2. Make the duxelles: In the same skillet, melt butter over medium heat. Add mushrooms, garlic, and thyme. Cook until all moisture evaporates and mixture is thick. Cool completely.
  3. Wrap: Lay prosciutto slices on plastic wrap, slightly overlapping. Spread mushroom duxelles evenly over prosciutto. Place beef on top and tightly roll using plastic wrap. Chill 20–30 minutes.
  4. Pastry wrap: Roll out puff pastry. Remove plastic wrap from beef and place in center of pastry. Wrap tightly, sealing edges. Chill again for 15 minutes.
  5. Bake: Preheat oven to 400°F (200°C). Brush pastry with egg wash and sprinkle with flaky salt.
  6. Bake for 35–40 minutes until pastry is golden and internal temperature reaches desired doneness.
  7. Rest 10 minutes before slicing and serving.

Notes

For best results, ensure all components are fully cooled before wrapping to prevent soggy pastry. Use a meat thermometer for perfect doneness—125°F for rare, 135°F for medium-rare.
