- 1 cup rhubarb, finely chopped

- Mix dry ingredients: Combine flour, sugar, baking powder, cinnamon, and salt.
- Mix wet ingredients: Whisk milk, egg, melted butter, and vanilla.
- Combine: Stir wet ingredients into dry ingredients until just combined.
- Add rhubarb: Fold in chopped rhubarb.
- Shape: Drop spoonfuls of batter onto baking sheet.
- Bake: Bake 15–18 minutes until golden.
- Glaze: Mix glaze ingredients and drizzle over warm fritters.
- Serve: Enjoy warm or at room temperature.
Notes
For extra flavor, add a pinch of nutmeg or lemon zest. These are best enjoyed fresh but can be reheated lightly before serving.
