- 6 large russet potatoes, baked and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups whole milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 6 slices bacon, cooked and crumbled
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- Salt and black pepper, to taste
- 2 green onions or chives, chopped (for garnish)
Instructions
- In a large pot, melt butter over medium heat. Add onion and garlic, cooking until softened.
- Whisk in flour to make a roux, cooking 1–2 minutes.
- Slowly whisk in milk and broth. Bring to a simmer until slightly thickened.
- Stir in diced baked potatoes, heavy cream, and cheddar cheese. Cook until cheese is melted and soup is creamy.
- Mix in sour cream and season with salt and black pepper.
- Serve hot, topped with crispy bacon, green onions, and extra cheese if desired.
Notes
For extra richness, leave some potato skins on. Add a pinch of smoked paprika for a deeper flavor.
