Description

Ingredients

  • 4 large eggs
  • 4 slices of cooked ham or Canadian bacon
  • 2 cups fresh spinach, sautéed
  • 1 tablespoon butter
  • 1 teaspoon olive oil
  • 1 cup hollandaise sauce (homemade or store-bought)
  • Salt and pepper, to taste
  • Fresh chives or paprika, for garnish
  • English muffins or toast, for serving

Instructions

  1. Preheat your oven to 180°C (350°F). Lightly butter four ramekins or small baking dishes.
  2. Layer each ramekin with a slice of ham, a spoonful of sautéed spinach, and a crack of black pepper.
  3. Crack one egg over each layer, keeping the yolk intact. Season lightly with salt.
  4. Place ramekins in a baking dish and pour hot water halfway up the sides for a gentle bake (bain-marie).
  5. Bake for 12–15 minutes, until egg whites are set but yolks remain creamy.
  6. Top with warm hollandaise sauce, a sprinkle of chives or paprika, and serve with toasted English muffins.

Notes

🍳 Tip: For a lighter version, swap the hollandaise for Greek yogurt mixed with a squeeze of lemon and Dijon mustard!
