- 4 large eggs
- 4 slices of cooked ham or Canadian bacon
- 2 cups fresh spinach, sautéed
- 1 tablespoon butter
- 1 teaspoon olive oil
- 1 cup hollandaise sauce (homemade or store-bought)
- Salt and pepper, to taste
- Fresh chives or paprika, for garnish
- English muffins or toast, for serving
Instructions
- Preheat your oven to 180°C (350°F). Lightly butter four ramekins or small baking dishes.
- Layer each ramekin with a slice of ham, a spoonful of sautéed spinach, and a crack of black pepper.
- Crack one egg over each layer, keeping the yolk intact. Season lightly with salt.
- Place ramekins in a baking dish and pour hot water halfway up the sides for a gentle bake (bain-marie).
- Bake for 12–15 minutes, until egg whites are set but yolks remain creamy.
- Top with warm hollandaise sauce, a sprinkle of chives or paprika, and serve with toasted English muffins.
Notes
