Classic Baked Eggs Florentine — creamy eggs, fresh spinach, and rich cheese baked to perfection. Perfect for brunch or a special breakfast! 🍳🌿🧀


Ingredients

Scale
  • 4 large eggs
  • 2 cups fresh spinach, sautéed
  • 1/4 cup heavy cream or milk
  • 2 tbsp butter
  • 1/4 cup grated Gruyère or Parmesan cheese
  • Salt and pepper, to taste
  • Optional: pinch of nutmeg
  • Optional: toasted English muffins for serving

Instructions

  1. Preheat oven to 375°F (190°C). Grease 4 ramekins with butter.
  2. Place sautéed spinach evenly in the bottom of each ramekin.
  3. Crack one egg over the spinach in each ramekin.
  4. Pour 1 tbsp cream or milk over each egg and season with salt, pepper, and nutmeg if using.
  5. Sprinkle cheese evenly on top.
  6. Place ramekins in a baking dish and add hot water halfway up the sides.
  7. Bake 12–15 minutes until whites are set and yolks are slightly runny.
  8. Serve immediately, optionally on toasted English muffins.
