Ingredients

- 4 large eggs
- 2 cups fresh spinach, sautéed
- 1/4 cup heavy cream or milk
- 2 tbsp butter
- 1/4 cup grated Gruyère or Parmesan cheese
- Salt and pepper, to taste
- Optional: pinch of nutmeg
- Optional: toasted English muffins for serving
Instructions
- Preheat oven to 375°F (190°C). Grease 4 ramekins with butter.
- Place sautéed spinach evenly in the bottom of each ramekin.
- Crack one egg over the spinach in each ramekin.
- Pour 1 tbsp cream or milk over each egg and season with salt, pepper, and nutmeg if using.
- Sprinkle cheese evenly on top.
- Place ramekins in a baking dish and add hot water halfway up the sides.
- Bake 12–15 minutes until whites are set and yolks are slightly runny.
- Serve immediately, optionally on toasted English muffins.
