- 1 cup unsalted butter, melted
- 1 cup brown sugar
- 2 cups old-fashioned oats
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
Rhubarb Filling
- 4 cups rhubarb, chopped
- 1 cup sugar
- 3 tbsp cornstarch
- 1 cup water
- 1 tsp vanilla extract

- Preheat oven: Set to 350°F (175°C) and grease a 9×13-inch baking pan.
- Make crust mixture: Combine melted butter, brown sugar, oats, flour, baking soda, and salt.
- Press base: Press half of the mixture into the bottom of the pan.
- Cook filling: In a saucepan, combine rhubarb, sugar, cornstarch, and water. Cook until thickened, then stir in vanilla.
- Assemble: Spread rhubarb filling over crust, then sprinkle remaining oat mixture on top.
- Bake: Bake 40–45 minutes until golden and set.
- Cool & slice: Let cool completely before cutting into bars.
Notes
For added texture, mix in chopped nuts with the crumble topping. These bars taste even better the next day after flavors develop.
