- 1 small onion, diced
- 2 cloves garlic, minced
- 4–5 medium potatoes, thinly sliced
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp olive oil or butter
- Optional garnish: fresh parsley

- Preheat oven: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook beef: Heat olive oil in a skillet over medium heat. Cook ground beef with onion and garlic until browned. Drain excess fat and season with salt, pepper, and paprika.
- Prepare sauce: In a bowl, combine cream of mushroom soup and milk until smooth.
- Assemble casserole: Layer half of the sliced potatoes in the baking dish. Top with half of the beef mixture and half of the soup mixture. Repeat layers. Sprinkle shredded cheese on top.
- Bake: Cover with foil and bake 50 minutes. Remove foil and bake 10–15 more minutes until cheese is melted and potatoes are tender.
- Serve: Let rest 5 minutes before serving. Garnish with parsley if desired.
Notes
For extra flavor, add sautéed mushrooms or bell peppers to the beef mixture. This casserole reheats well and makes great leftovers.
