- Butternut Squash Risotto: 1 cup arborio rice, 3 cups vegetable broth, 1 cup roasted butternut squash, 1/2 cup grated Parmesan, 1/4 cup onion (chopped), 2 tbsp butter, 1 tbsp olive oil, salt & pepper
Instructions
- Cranberry-Orange Glazed Brussels Sprouts: Preheat oven to 400°F. Toss halved Brussels sprouts with olive oil, salt, and pepper. Roast 20–25 min. In a saucepan, cook cranberries, orange juice, honey, and cinnamon until thickened. Toss roasted sprouts with glaze and serve.
- Maple Bacon Sweet Potato Casserole: Preheat oven to 350°F. Mix mashed sweet potatoes with butter, maple syrup, cinnamon, and nutmeg. Spread in a casserole dish, top with bacon and pecans. Bake 20–25 min until golden.
- Butternut Squash Risotto: In a skillet, sauté onion in olive oil and butter until soft. Add rice and cook 2 min. Gradually add broth, stirring constantly, until rice is tender. Stir in roasted squash and Parmesan. Season with salt and pepper, and serve warm.
