- 2 tbsp olive oil
- 2 lbs beef stew meat, cut into chunks
- 1/4 cup all-purpose flour
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 large carrots, sliced
- 3 celery stalks, chopped
- 2 cups baby potatoes, halved
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1 bay leaf
- 4 cups beef broth
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Brown the beef: Toss beef with flour, salt, and pepper. In a large Dutch oven, heat oil and sear beef in batches until browned. Remove and set aside.
- Sauté veggies: In the same pot, add onion, carrots, and celery. Cook until softened. Stir in garlic and tomato paste; cook for 1 minute.
- Simmer: Return beef to the pot. Add potatoes, thyme, paprika, bay leaf, and beef broth. Bring to a simmer, cover, and cook on low heat for 1.5 to 2 hours, or until beef is tender.
- Finish & serve: Remove bay leaf. Taste and adjust seasoning. Garnish with parsley and serve hot from your cauldron—or pot!
Notes
For an even creepier twist, add pearl onions or mushrooms as ‘eyeballs.’ Serve in black bowls with dry ice for a witchy effect. Great with crusty bread or over mashed potatoes!
