- 2 lbs beef stew meat, cut into chunks
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup all-purpose flour
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 cups beef broth
- 1 cup dark beer or red wine (optional)
- 2 tbsp tomato paste
- 3 carrots, sliced
- 3 potatoes, cubed
- 1 cup mushrooms, sliced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 tbsp Worcestershire sauce
- Fresh parsley, for garnish

- Season & coat beef: Season beef with salt and pepper, then toss with flour until coated.
- Sear: Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef on all sides. Remove and set aside.
- Sauté aromatics: Add onion to the pot and cook until softened. Add garlic and cook 30 seconds.
- Build broth: Stir in tomato paste, then add beef broth, beer or wine, Worcestershire sauce, thyme, rosemary, and bay leaf.
- Simmer: Return beef to the pot. Add carrots, potatoes, and mushrooms. Bring to a gentle boil, then reduce to low.
- Cover and simmer for 2–2.5 hours, stirring occasionally, until beef is tender and stew is thick.
- Finish: Remove bay leaf, adjust seasoning, and serve hot.
Notes
For an extra dark, spooky look, use mushrooms generously and a splash of dark beer. This stew tastes even better the next day and freezes well for up to 2 months.
