  • 2 lbs beef stew meat, cut into chunks
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup all-purpose flour
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup dark beer or red wine (optional)
  • 2 tbsp tomato paste
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 1 cup mushrooms, sliced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 tbsp Worcestershire sauce
  • Fresh parsley, for garnish

  1. Season & coat beef: Season beef with salt and pepper, then toss with flour until coated.
  2. Sear: Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef on all sides. Remove and set aside.
  3. Sauté aromatics: Add onion to the pot and cook until softened. Add garlic and cook 30 seconds.
  4. Build broth: Stir in tomato paste, then add beef broth, beer or wine, Worcestershire sauce, thyme, rosemary, and bay leaf.
  5. Simmer: Return beef to the pot. Add carrots, potatoes, and mushrooms. Bring to a gentle boil, then reduce to low.
  6. Cover and simmer for 2–2.5 hours, stirring occasionally, until beef is tender and stew is thick.
  7. Finish: Remove bay leaf, adjust seasoning, and serve hot.

Notes

For an extra dark, spooky look, use mushrooms generously and a splash of dark beer. This stew tastes even better the next day and freezes well for up to 2 months.
