- 24 chocolate sandwich cookies (crushed)
- 1/4 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- Purple and green gel food coloring
- Black food coloring (optional for spooky effect)
Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
- Mix crushed cookies with melted butter and press into the bottom of the pan to form the crust.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Divide batter into three bowls. Tint one bowl purple, one green, and leave one plain (or tint black for a spooky effect).
- Pour spoonfuls of each color alternately into the crust, layering colors. Swirl gently with a knife to create a marbled effect.
- Bake for 50–60 minutes, until the center is set but still slightly jiggly.
- Turn off oven, crack the door, and let cheesecake cool slowly for 1 hour.
- Refrigerate at least 4 hours or overnight before serving.
