- 4 cups cubed seedless watermelon
- 1 cup cucumber, sliced and halved
- ½ cup crumbled feta cheese
- ¼ cup fresh mint leaves, torn
- 2 tablespoons lime juice (about 1 lime)
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- Optional: balsamic glaze for drizzling
Instructions
- Prep the Produce: Cube the watermelon, slice the cucumber, and tear the mint leaves. Place everything in a large bowl.
- Make the Dressing: In a small bowl or jar, whisk together lime juice, olive oil, salt, and pepper.
- Toss the Salad: Pour dressing over the watermelon mixture and gently toss to coat.
- Finish & Serve: Top with crumbled feta and extra mint. Drizzle with balsamic glaze if using. Serve immediately or chill for up to 2 hours.
Notes
Best enjoyed fresh. For added crunch, toss in chopped red onion or roasted pistachios. Can be made vegan by omitting feta or using plant-based cheese.
