  • Author: recipeinspire
  • Total Time: 10 minutes
  • Yield: 4 servings 1x

Description

This Watermelon Feta Salad is the ultimate refreshing summer dish — juicy watermelon, salty feta, crisp cucumber, and fresh mint tossed in a light lime dressing. It’s perfect for BBQs, picnics, or as a side to grilled mains.

Ingredients

Scale
  • 4 cups cubed seedless watermelon
  • 1 cup cucumber, sliced and halved
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves, torn
  • 2 tablespoons lime juice (about 1 lime)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional: balsamic glaze for drizzling

Instructions

  1. Prep the Produce: Cube the watermelon, slice the cucumber, and tear the mint leaves. Place everything in a large bowl.
  2. Make the Dressing: In a small bowl or jar, whisk together lime juice, olive oil, salt, and pepper.
  3. Toss the Salad: Pour dressing over the watermelon mixture and gently toss to coat.
  4. Finish & Serve: Top with crumbled feta and extra mint. Drizzle with balsamic glaze if using. Serve immediately or chill for up to 2 hours.

Notes

Best enjoyed fresh. For added crunch, toss in chopped red onion or roasted pistachios. Can be made vegan by omitting feta or using plant-based cheese.
