Description

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant and softened.
  2. Add carrots, celery, zucchini, green beans, broccoli, and cauliflower. Cook for 5–7 minutes, stirring occasionally.
  3. Stir in diced tomatoes, vegetable broth, thyme, parsley, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
  5. Adjust seasoning to taste and serve hot, garnished with fresh parsley.

Notes

Use any seasonal vegetables you have on hand. For a richer flavor, roast some of the vegetables before adding them to the soup.
