- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant and softened.
- Add carrots, celery, zucchini, green beans, broccoli, and cauliflower. Cook for 5–7 minutes, stirring occasionally.
- Stir in diced tomatoes, vegetable broth, thyme, parsley, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
- Adjust seasoning to taste and serve hot, garnished with fresh parsley.
Notes
Use any seasonal vegetables you have on hand. For a richer flavor, roast some of the vegetables before adding them to the soup.
