Instructions

  1. Prepare crust: Mix chocolate cookie crumbs and melted butter. Press into bottom of a 9-inch springform pan. Chill while preparing filling.
  2. Make cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, cocoa powder, red food coloring, and sour cream. Mix until fully combined.
  3. Bake: Pour filling over crust. Bake at 325°F (163°C) for 50-60 minutes or until center is almost set.
  4. Cool: Turn off oven, crack door, and let cheesecake cool inside for 1 hour. Then refrigerate at least 4 hours or overnight.
  5. Add ‘blood’ drip: Warm raspberry jam slightly, then drizzle over chilled cheesecake for vampire bite effect.
