  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tbsp vanilla extract

For the Royal Icing

  • 4 cups powdered sugar
  • 3 tbsp meringue powder
  • 56 tbsp warm water
  • Gel food coloring (pink, red, white)

Make the Cookies

  1. Whisk together flour, baking powder, and salt in a bowl.
  2. In a separate bowl, beat butter and sugar until light and fluffy.
  3. Add egg and vanilla and mix until combined.
  4. Gradually add dry ingredients and mix until a dough forms.
  5. Wrap dough and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C).
  7. Roll dough to 1/4-inch thickness and cut with heart-shaped cookie cutters.
  8. Place on parchment-lined baking sheets and bake for 8–10 minutes.
  9. Cool completely before decorating.

Make the Royal Icing

  1. Beat powdered sugar, meringue powder, and water until stiff peaks form.
  2. Divide icing and tint with food coloring as desired.
  3. Outline cookies with thicker icing, then flood with thinner icing.
  4. Allow cookies to dry completely before stacking or packaging.

Notes

For best results, allow royal icing to dry 6–8 hours. Cookies can be made a day ahead and stored undecorated in an airtight container.
