- Prepare caramel layer: Melt caramels with heavy cream in a small saucepan over low heat until smooth. Pour over cooled shortbread and spread evenly. Refrigerate 15–20 minutes to set.
- Add chocolate layer: Melt chocolate with oil (if using) until smooth. Pour over set caramel layer and spread evenly. Refrigerate until chocolate is firm, about 30 minutes.
- Cut into bars or squares and serve. Store in an airtight container.
Notes
For extra flavor, sprinkle a pinch of sea salt on the caramel before adding chocolate. Use high-quality chocolate for best results. You can make this ahead and store in the fridge for up to a week.
