- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 1 can (10 oz) red enchilada sauce
- 1/2 cup sour cream
- 1 tsp garlic powder
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt & pepper, to taste
- 8 small flour or corn tortillas
- Fresh cilantro, for garnish (optional)
- Sliced jalapeños or avocado (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a bowl, mix shredded chicken with 1/2 cup enchilada sauce, sour cream, garlic powder, chili powder, cumin, salt, and pepper.
- Warm tortillas to prevent tearing.
- Spoon chicken mixture into each tortilla, sprinkle with cheese, and roll tightly.
- Place enchiladas seam-side down in the baking dish.
- Pour remaining enchilada sauce evenly over the top.
- Sprinkle with remaining cheese.
- Bake for 18–22 minutes, or until cheese is melted and bubbly.
- Garnish with cilantro, jalapeños, or avocado, and serve warm!
