The ultimate crockpot version of classic French Onion Soup. Deeply caramelized onions, rich broth, and gooey melted cheese make this slow-cooked comfort soup irresistible.

- 5 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 8 cups beef broth
- 1/2 cup dry white wine (optional)
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- Baguette slices, toasted
- 2 cups shredded Gruyère cheese
Instructions
- Melt butter with olive oil in a skillet over medium heat. Add onions, sugar, salt, and pepper; cook until caramelized, about 30 minutes.
- Transfer onions to crockpot. Add garlic, beef broth, wine, Worcestershire sauce, and thyme. Stir to combine.
- Cover and cook on LOW for 6–8 hours, or on HIGH for 3–4 hours.
- Preheat broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices, and sprinkle shredded Gruyère.
- Broil until cheese is bubbly and golden, about 2–4 minutes. Serve immediately.
Notes
For an extra rich flavor, use a combination of beef and chicken broth. Gruyère can be substituted with Swiss or mozzarella cheese.
