Ingredients

  • 6 large russet potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 4 slices bacon, cooked and crumbled (optional)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh chives, for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Sauté onions and garlic until soft and fragrant.
  2. Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
  3. Use an immersion blender to blend until smooth, leaving some chunks if desired.
  4. Stir in heavy cream, cheddar cheese, and sour cream. Heat gently until cheese is melted and soup is creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with crumbled bacon and chopped chives.

Notes
