- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp red pepper flakes (optional)
- 4 cups vegetable or chicken broth
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 bay leaf
- Salt and black pepper, to taste
- 2 cups fresh spinach or kale
- Fresh parsley or grated Parmesan, for garnish

- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook 5–6 minutes until softened.
- Stir in garlic, thyme, rosemary, and red pepper flakes; cook 30 seconds until fragrant.
- Pour in broth, add beans, tomatoes, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer 20 minutes.
- Remove bay leaf and lightly mash some beans to thicken the soup.
- Stir in spinach or kale and cook 2–3 minutes until wilted.
- Taste and adjust seasoning. Serve hot with garnish.
Notes
For extra richness, drizzle with olive oil before serving or add a Parmesan rind while simmering. This soup freezes well and tastes even better the next day.
