  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp red pepper flakes (optional)
  • 4 cups vegetable or chicken broth
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 2 cups fresh spinach or kale
  • Fresh parsley or grated Parmesan, for garnish

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook 5–6 minutes until softened.
  3. Stir in garlic, thyme, rosemary, and red pepper flakes; cook 30 seconds until fragrant.
  4. Pour in broth, add beans, tomatoes, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer 20 minutes.
  6. Remove bay leaf and lightly mash some beans to thicken the soup.
  7. Stir in spinach or kale and cook 2–3 minutes until wilted.
  8. Taste and adjust seasoning. Serve hot with garnish.

Notes

For extra richness, drizzle with olive oil before serving or add a Parmesan rind while simmering. This soup freezes well and tastes even better the next day.
