- 2 (15 oz) cans white beans, drained and rinsed
- 4 cups vegetable or chicken broth
- 1 (14.5 oz) can diced tomatoes

- 2 cups fresh spinach or kale
- Fresh parsley or grated Parmesan for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- SautΓ© onion, garlic, carrots, and celery until softened, about 5 minutes.
- Add rosemary, thyme, and red pepper flakes; cook 1 minute until fragrant.
- Stir in white beans, broth, and diced tomatoes; bring to a simmer.
- Simmer for 15β20 minutes to allow flavors to meld.
- Add fresh spinach or kale and cook 2β3 minutes until wilted.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley or Parmesan.
