  • 2 cups fresh spinach or kale
  • Fresh parsley or grated Parmesan for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. SautΓ© onion, garlic, carrots, and celery until softened, about 5 minutes.
  3. Add rosemary, thyme, and red pepper flakes; cook 1 minute until fragrant.
  4. Stir in white beans, broth, and diced tomatoes; bring to a simmer.
  5. Simmer for 15–20 minutes to allow flavors to meld.
  6. Add fresh spinach or kale and cook 2–3 minutes until wilted.
