- 1 lb (450g) potatoes, peeled and chopped
- 3/4 cup all-purpose flour, plus extra for dusting
- 1 tsp salt
- 2 tbsp unsalted butter, melted (for frying)

- Boil the peeled and chopped potatoes in salted water until tender, about 15 minutes. Drain well.
- Mash the potatoes until smooth and allow to cool slightly.
- Add flour and salt to the mashed potatoes and mix to form a soft dough. It should be slightly sticky but manageable.
- Divide the dough into 4 equal portions and shape each into a round, flattening slightly to about 1/2-inch thick.
- Heat a non-stick skillet or griddle over medium heat and brush lightly with melted butter.
- Cook each farl for 3–5 minutes per side, or until golden brown and cooked through.
- Serve warm with butter, alongside eggs, or with soups and stews.
Notes
For extra flavor, you can add a pinch of black pepper or chopped chives to the dough. Ensure the potatoes are well-drained before mixing to avoid a sticky dough.
