  • 1 lb (450g) potatoes, peeled and chopped
  • 3/4 cup all-purpose flour, plus extra for dusting
  • 1 tsp salt
  • 2 tbsp unsalted butter, melted (for frying)

  1. Boil the peeled and chopped potatoes in salted water until tender, about 15 minutes. Drain well.
  2. Mash the potatoes until smooth and allow to cool slightly.
  3. Add flour and salt to the mashed potatoes and mix to form a soft dough. It should be slightly sticky but manageable.
  4. Divide the dough into 4 equal portions and shape each into a round, flattening slightly to about 1/2-inch thick.
  5. Heat a non-stick skillet or griddle over medium heat and brush lightly with melted butter.
  6. Cook each farl for 3–5 minutes per side, or until golden brown and cooked through.
  7. Serve warm with butter, alongside eggs, or with soups and stews.

Notes

For extra flavor, you can add a pinch of black pepper or chopped chives to the dough. Ensure the potatoes are well-drained before mixing to avoid a sticky dough.
