  • 1 large head of green cabbage, quartered
  • 4 large potatoes, peeled and halved
  • 4 large carrots, peeled and chopped
  • 1 large onion, peeled and quartered
  • 6 cups water
  • 1 tsp black peppercorns
  • 2 bay leaves
  • Salt to taste
  • Optional: chopped fresh parsley for garnish

  1. Place bacon in a large pot and cover with water. Add peppercorns and bay leaves.
  2. Bring to a boil, then reduce heat to a simmer. Skim off any scum that rises to the surface.
  3. Simmer bacon gently for 1–1.5 hours, until tender.
  4. Add potatoes, carrots, and onion to the pot. Cook for 15–20 minutes until vegetables are tender.
  5. Add cabbage quarters on top of the vegetables and cook for an additional 5–10 minutes until cabbage is tender but still bright green.
  6. Remove bacon and vegetables from the pot. Slice bacon and serve with the vegetables, garnishing with parsley if desired.

Notes

For extra flavor, you can simmer the bacon in a mix of water and a little beer. Serve with mustard or parsley sauce for a traditional Irish touch.
