- 3–4 lbs Irish-style cured bacon (shoulder or back)
- 1 large head of green cabbage, quartered
- 4 large potatoes, peeled and halved
- 4 large carrots, peeled and chopped
- 1 large onion, peeled and quartered
- 6 cups water
- 1 tsp black peppercorns
- 2 bay leaves
- Salt to taste
- Optional: chopped fresh parsley for garnish

- Place bacon in a large pot and cover with water. Add peppercorns and bay leaves.
- Bring to a boil, then reduce heat to a simmer. Skim off any scum that rises to the surface.
- Simmer bacon gently for 1–1.5 hours, until tender.
- Add potatoes, carrots, and onion to the pot. Cook for 15–20 minutes until vegetables are tender.
- Add cabbage quarters on top of the vegetables and cook for an additional 5–10 minutes until cabbage is tender but still bright green.
- Remove bacon and vegetables from the pot. Slice bacon and serve with the vegetables, garnishing with parsley if desired.
Notes
For extra flavor, you can simmer the bacon in a mix of water and a little beer. Serve with mustard or parsley sauce for a traditional Irish touch.
