- 1 pint cherry or grape tomatoes
- 2 tablespoons olive oil

- Fresh basil leaves (whole or torn)
- Balsamic glaze, for drizzling
- Wooden or metal skewers
Instructions
- Prep Gnocchi: Boil gnocchi in salted water according to package directions, just until they float. Drain and pat dry.
- Season: In a bowl, toss gnocchi and tomatoes with olive oil, garlic powder, salt, and pepper.
- Assemble Kebabs: Thread gnocchi, tomatoes, and basil onto skewers, alternating for color and balance.
- Grill: Preheat grill or grill pan to medium-high. Grill skewers 2–3 minutes per side, until gnocchi are golden and tomatoes begin to blister.
- Serve: Transfer to a platter, drizzle with balsamic glaze, and garnish with extra basil.
Notes
Use metal skewers or soak wooden skewers for 30 minutes before grilling. Add mozzarella balls or red onion for variety. Serve warm or room temp as a side, starter, or light main.
