  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 tablespoons espresso or strong coffee, cooled
  • 2 teaspoons vanilla extract
  • 1 tablespoon instant espresso powder

Topping

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Unsweetened cocoa powder, for dusting

  1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Mix cookie crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
  3. Bake crust for 10 minutes, then set aside to cool.
  4. In a large bowl, beat cream cheese until smooth.
  5. Add sugar and mix until combined.
  6. Beat in eggs one at a time, mixing just until incorporated.
  7. Mix in sour cream, espresso, espresso powder, and vanilla.
  8. Pour filling over crust and smooth the top.
  9. Bake for 50–55 minutes, until edges are set and center slightly jiggles.
  10. Turn off oven, crack door, and let cheesecake cool for 1 hour.
  11. Refrigerate at least 4 hours or overnight.
  12. Whip cream with powdered sugar and spread over cheesecake.
  13. Dust generously with cocoa powder before serving.
