- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- Unsweetened cocoa powder, for dusting

- Mix cookie crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
- Bake crust for 10 minutes, then set aside to cool.

- Add sugar and mix until combined.
- Beat in eggs one at a time, mixing just until incorporated.
- Mix in sour cream, espresso, espresso powder, and vanilla.
- Pour filling over crust and smooth the top.
- Bake for 50–55 minutes, until edges are set and center slightly jiggles.
- Turn off oven, crack door, and let cheesecake cool for 1 hour.
- Refrigerate at least 4 hours or overnight.
- Whip cream with powdered sugar and spread over cheesecake.
- Dust generously with cocoa powder before serving.
