- 2 cups pumpkin puree
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/2 tsp salt
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
- In a large bowl, whisk together pumpkin puree, brown sugar, granulated sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
- Pour pumpkin mixture into prepared baking dish.
- In a separate bowl, mix flour and baking powder. Stir in milk and melted butter until just combined.
- Drop spoonfuls of the biscuit batter over the pumpkin filling, covering as much surface as possible.
- Bake for 40-45 minutes until biscuit topping is golden and pumpkin filling is set.
- Allow to cool slightly before serving. Delicious warm with whipped cream or vanilla ice cream.
Notes
For a richer cobbler, use half-and-half instead of milk. Be careful not to overmix the biscuit batter to keep it tender.
