- 1 lb (450g) ground beef or turkey
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cans (15 oz each) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Fresh cilantro or shredded cheese, for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add ground meat and cook until browned. Drain excess fat if necessary.
- Add onion, garlic, and bell peppers. Cook until vegetables are softened.
- Stir in chili powder, smoked paprika, cumin, cayenne, salt, and pepper. Cook for 1–2 minutes to toast the spices.
- Add diced tomatoes and beans. Bring to a boil, then reduce heat to low and simmer for 25–30 minutes, stirring occasionally.
- Adjust seasoning if needed. Serve hot, garnished with cilantro, shredded cheese, or a dollop of sour cream.
Notes
For deeper flavor, simmer chili for 1–2 hours. You can also add corn or chopped jalapeños for extra texture and heat.
