  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cans (15 oz each) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Fresh cilantro or shredded cheese, for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground meat and cook until browned. Drain excess fat if necessary.
  2. Add onion, garlic, and bell peppers. Cook until vegetables are softened.
  3. Stir in chili powder, smoked paprika, cumin, cayenne, salt, and pepper. Cook for 1–2 minutes to toast the spices.
  4. Add diced tomatoes and beans. Bring to a boil, then reduce heat to low and simmer for 25–30 minutes, stirring occasionally.
  5. Adjust seasoning if needed. Serve hot, garnished with cilantro, shredded cheese, or a dollop of sour cream.

Notes

For deeper flavor, simmer chili for 1–2 hours. You can also add corn or chopped jalapeños for extra texture and heat.
