- 3 cups all-purpose flour
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 large egg
- 1/4 cup molasses
- 1 tsp vanilla extract
- Optional: coarse sugar or icing for decorating
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
- In a large bowl, cream butter and brown sugar until light and fluffy.
- Add egg, molasses, and vanilla, mixing until smooth.
- Gradually add dry ingredients to wet ingredients until a soft dough forms.
- Roll dough into 1–1.5 tbsp balls and place on prepared baking sheets, spacing 2 inches apart. Flatten slightly if desired.
- Bake 8–10 minutes until edges are set but centers are still soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Optional: decorate with icing or sprinkle with coarse sugar once cooled.
Notes
For extra soft cookies, slightly underbake. Chilling the dough for 30 minutes helps maintain shape. Store in an airtight container to keep them soft for up to 5 days.
