  • 1 lb ground beef
  • 1 tbsp olive oil (if needed)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 3 cups beef or chicken broth
  • Salt and black pepper, to taste
  • Optional toppings: shredded cheese, sour cream, tortilla chips, avocado, cilantro

  1. In a large pot over medium heat, brown the ground beef with onion until fully cooked. Drain excess grease.
  2. Add garlic and cook 30 seconds until fragrant.
  3. Stir in taco seasoning and cook 1 minute.
  4. Add beans, corn, diced tomatoes, Rotel, and broth.
  5. Bring to a boil, then reduce heat and simmer 20–25 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot with your favorite toppings.

Notes

This soup is very customizable—use ground turkey instead of beef or add extra spice with jalapeños or hot sauce. Leftovers taste even better the next day.
