- 4 cups powdered sugar, sifted
- 3 tbsp meringue powder
- 5–6 tbsp warm water
- 1 tsp vanilla extract or almond extract (optional)
- Food coloring as desired

- In a large bowl, whisk together powdered sugar and meringue powder.
- Add 5 tablespoons of warm water and vanilla or almond extract.
- Mix on low speed until combined, then increase to medium-high and whip 3–5 minutes until stiff peaks form.
- Adjust consistency: keep thick for piping, thin slightly for flooding using 1 tsp water at a time.
- Divide into portions and add food coloring if desired.
- Use immediately on sugar cookies. Icing will set within 30–60 minutes.
- Cover unused icing with a damp cloth or airtight container to prevent drying.
Notes
Sift powdered sugar to avoid lumps. Use a toothpick to pop air bubbles for a smooth finish. A small fan can speed up drying for stacking cookies or layering designs.
