- 4 cups powdered sugar, sifted
- 3 tbsp meringue powder
- 5–6 tbsp warm water
- 1 tsp vanilla extract or almond extract (optional)

- In a large bowl, whisk together powdered sugar and meringue powder.
- Add 5 tablespoons of warm water and vanilla or almond extract.
- Mix on low speed until combined, then increase to medium-high and whip for 3–5 minutes until stiff peaks form.
- Adjust consistency: For piping, keep thick; for flooding, add water 1 tsp at a time until smooth.
- Divide into portions and color with food coloring if desired.
- Use immediately on cookies. Icing will set within 30–60 minutes at room temperature.
- Cover unused portions with a damp cloth or airtight container to prevent drying out.
Notes
Sift powdered sugar to avoid lumps. For perfectly smooth surfaces, use a toothpick or scribe tool to pop air bubbles. A small fan can speed up drying time for stacking cookies.
