- 1/2 tsp dried thyme
- 1 cup shredded cheddar cheese

- Add potatoes & broth: Stir in diced potatoes, chicken broth, salt, pepper, and thyme. Bring to a boil, then reduce to a simmer 15–20 minutes until potatoes are tender.
- Add cream: Stir in milk and heavy cream. Simmer 5 minutes.
- Blend (optional): For a smoother soup, use an immersion blender to partially blend the potatoes, leaving some chunks for texture.
- Add cheese: Stir in cheddar until melted.
- Serve: Top with crispy bacon, sliced green onions, and a dollop of sour cream if desired.
Notes
