Inspired by Gordon Ramsay, this carbonara pasta is creamy, rich, and perfectly balanced — made with eggs, Parmesan, pancetta or bacon, and black pepper for an authentic Italian flavor without cream or wine.

- 12 oz spaghetti or fettuccine
- 6 oz pancetta or bacon, diced
- 3 large egg yolks + 1 whole egg
- 1 cup finely grated Parmesan cheese
- 1 tsp freshly ground black pepper
- Salt for pasta water
- Optional: parsley for garnish

- Cook pasta in salted water until al dente. Reserve 1/2 cup pasta water and drain.
- In a skillet, cook pancetta/bacon until crisp. Remove from heat.
- In a bowl, whisk egg yolks, whole egg, Parmesan, and black pepper.
- Add hot pasta to skillet with pancetta and toss.
- Off the heat, quickly stir in egg mixture, tossing constantly to create a creamy sauce.
- Add reserved pasta water gradually to achieve desired consistency.
- Garnish with parsley and extra Parmesan. Serve immediately.
Notes
Remove skillet from heat before adding eggs to prevent scrambling. Use authentic Pecorino Romano for a traditional taste.
