- For the Brownie Layer:
- ½ cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ½ cup chocolate chips
- For the Cookie Layer:
- ½ cup (1 stick) unsalted butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ¼ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup chocolate chips
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Make the Brownie Batter: In a bowl, whisk melted butter and sugar. Add eggs and vanilla, whisk until smooth. Stir in cocoa powder, flour, and salt. Fold in chocolate chips. Pour into prepared pan and smooth evenly.
- Make the Cookie Dough: In another bowl, cream together softened butter, brown sugar, and granulated sugar. Beat in egg and vanilla. Stir in flour, baking soda, and salt. Fold in chocolate chips.
- Layer the Brookies: Drop spoonfuls of cookie dough over the brownie batter and gently spread it out to mostly cover the top. It doesn’t need to be perfect!
- Bake: Bake for 30–35 minutes, or until the cookie layer is golden and a toothpick inserted comes out with a few moist crumbs.
- Cool & Slice: Let cool completely in the pan before slicing for clean layers. Enjoy!
Notes
For extra decadence, sprinkle sea salt on top before baking. These brookies freeze well—wrap tightly and freeze for up to 2 months. Use a plastic knife to cut for cleaner edges.
