    • 4 oz cream cheese, softened
    • 1/2 cup heavy cream

Instructions

  1. Preheat oven: Set to 350°F (175°C) and line baking sheets with parchment paper.
  2. Make the cookies: Cream together butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour, baking powder, spices, and salt. Gradually mix dry ingredients into wet until combined.
  3. Shape & bake: Scoop dough into balls, flatten slightly, and use a small cup or spoon to make a shallow well in the center. Bake 10–12 minutes until edges are lightly golden. Cool completely.
  4. Prepare filling: In a mixing bowl, beat pumpkin puree, brown sugar, and pumpkin pie spice until smooth. Beat in cream cheese until creamy. Whip the heavy cream separately until soft peaks form, then fold into the pumpkin mixture.
  5. Assemble: Spoon or pipe the pumpkin filling into the cooled cookie wells. Top each with a swirl of whipped cream and a sprinkle of cinnamon or nutmeg.
