- 1 small onion, diced
- 2 cloves garlic, minced

- 3 cups beef broth
- 1 cup milk or heavy cream

- 2 stalks celery, diced
- 1 tsp salt
- 1/2 tsp black pepper
- Optional: chopped green onions or bacon bits for garnish

- Stir in milk or cream and shredded cheddar cheese. Cook until cheese is melted and soup is creamy.
- Adjust seasoning to taste. Garnish with green onions or bacon bits if desired. Serve hot.
Notes
For a thicker soup, mash some of the potatoes while cooking. You can also add pickles or a splash of mustard for a true cheeseburger flavor.
