- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 3–4 medium potatoes, peeled and diced
- 2 cups shredded cheddar cheese
- 1 cup milk or half-and-half
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- Optional: chopped pickles or cooked bacon for garnish

- Add onion and garlic; sauté until softened.
- Stir in butter and then flour to create a roux. Cook 1–2 minutes.
- Gradually add beef broth, stirring constantly, then add diced potatoes.
- Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15–20 minutes).
- Stir in milk and shredded cheddar cheese until smooth and creamy.
- Season with salt and pepper. Adjust thickness with more milk or broth if needed.
- Serve hot, garnished with optional pickles or bacon if desired.
Notes
For extra flavor, add a teaspoon of mustard or a splash of Worcestershire sauce. This soup keeps well in the fridge for 3–4 days and can be frozen for longer storage.
