- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups potatoes, peeled and diced
- 2 cups chicken or beef broth
- 1 cup milk or half-and-half
- 1 cup shredded cheddar cheese
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tbsp butter
- 1 tbsp all-purpose flour
- Salt and pepper, to taste
- Optional toppings: chopped pickles, green onions, extra cheese

- Cook beef: In a large pot, brown ground beef over medium heat with onion and garlic. Drain excess fat.
- Cook vegetables: Add diced potatoes, carrots, and celery to the pot. Stir and cook 2–3 minutes.
- Add broth: Pour in broth and bring to a boil. Reduce heat and simmer 15–20 minutes until vegetables are tender.
- Make roux: In a small pan, melt butter, whisk in flour and cook 1 minute. Slowly add milk, whisking constantly until smooth and thickened.
- Combine: Stir milk mixture into the soup. Add shredded cheese and stir until melted and creamy.
- Season & serve: Taste and adjust salt and pepper. Garnish with optional toppings and serve hot.
Notes
For extra flavor, use sharp cheddar cheese and add a dash of Worcestershire sauce. You can also make it in a slow cooker for a hands-off version.
