- 1 large head of cauliflower, cut into florets
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth (or chicken broth)
- 1 cup milk (or dairy-free alternative)
- 1/2 cup shredded cheddar cheese (optional)
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper. Roast for 20–25 minutes until golden.
- In a large pot, heat remaining olive oil. Sauté onion and garlic until softened.
- Add roasted cauliflower and vegetable broth. Simmer for 10–15 minutes.
- Blend the soup with an immersion blender until creamy.
- Stir in milk, smoked paprika, and optional cheese. Adjust seasoning with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
For a lighter version, skip the cheese and use unsweetened almond milk or oat milk. Add a sprinkle of red pepper flakes for a spicy kick.
