  • 1 cup ricotta cheese, drained
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup mini chocolate chips
  • Optional Toppings
  • Powdered sugar for dusting
  • Extra chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients to form a soft dough.
  5. Roll dough into 1-inch balls and place on prepared baking sheets, spacing about 2 inches apart.
  6. Bake for 10–12 minutes until edges are lightly golden. Cool completely on a wire rack.
  7. For the filling, combine ricotta, powdered sugar, and vanilla extract until smooth. Fold in mini chocolate chips.
  8. Once cookies are cooled, spread or pipe a generous amount of filling onto the flat side of one cookie and top with a second cookie to make a sandwich.
  9. Optional: Dust with powdered sugar or sprinkle extra chocolate chips on top before serving.

Notes

Make sure the ricotta is well-drained to avoid a runny filling. These cookies can be made ahead and stored in an airtight container for up to 3 days. Add orange zest or chopped pistachios to the filling for extra flavor and texture.
