- 1 medium head green cabbage, chopped
- 1 lb ground beef or turkey (optional)
- 1 large onion, diced
- 3 garlic cloves, minced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 bell pepper, diced
- 1 can (28 oz) crushed tomatoes
- 6 cups beef or vegetable broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and black pepper, to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. If using meat, add ground beef or turkey and cook until browned; drain excess fat.
- Add onion and garlic, sauté for 2–3 minutes until fragrant.
- Stir in carrots, celery, bell pepper, and cabbage. Cook for 5 minutes.
- Add crushed tomatoes, broth, thyme, oregano, salt, and pepper.
- Bring to a boil, reduce heat, and simmer for 30–35 minutes until vegetables are tender.
- Serve hot, optionally garnished with fresh parsley or grated cheese.
Notes
For a vegetarian version, skip the meat and use vegetable broth. This soup freezes well and tastes even better the next day.
