  • 6 cups beef or vegetable broth

  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. If using meat, add ground beef or turkey and cook until browned; drain excess fat.
  2. Add onion and garlic, sauté for 2–3 minutes until fragrant.
  3. Stir in carrots, celery, bell pepper, and cabbage. Cook for 5 minutes.
  4. Add crushed tomatoes, broth, thyme, oregano, salt, and pepper.
  5. Bring to a boil, reduce heat, and simmer for 30–35 minutes until vegetables are tender.
  6. Serve hot, optionally garnished with fresh parsley or grated cheese.

Notes

For a vegetarian version, skip the meat and use vegetable broth. This soup freezes well and tastes even better the next day.
