Description

This is the ultimate apple pie filling 🍎—sweet, tart, and perfectly spiced for your homemade pies, tarts, or hand pies. Ready in minutes and ideal for freezing or canning!

Ingredients

Scale
  • 6 cups peeled, cored, and sliced apples (Granny Smith, Honeycrisp, or mix)
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ¼ cup cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 ½ cups water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a medium saucepan, whisk together sugar, brown sugar, cornstarch, cinnamon, nutmeg, and salt.
  2. Add water and cook over medium heat, whisking until thickened and bubbly (about 5–7 minutes).
  3. Add sliced apples and lemon juice. Stir gently to coat and cook for 10–12 minutes until apples begin to soften.
  4. Remove from heat, stir in vanilla extract, and cool completely before using in pies or tarts.
  5. Store in an airtight jar in the refrigerator for up to 1 week or freeze for up to 3 months.

Notes

🍏 Tip: Mix apple varieties for the best flavor balance—tart Granny Smith with sweet Honeycrisp or Fuji. This filling also works great for turnovers and galettes!
