  • 1 onion (cut in half and peeled)
  • 3 cups San Marzano tomatoes

Instructions

  1. Start by preparing the infused oil. In a small saucepan, combine the olive oil, garlic, hot pepper flakes, and fresh basil. Heat over medium-low until the basil begins to wilt and the garlic becomes aromatic. This should take about 45 seconds to 2 minutes. Remove from heat and set aside.
  2. In a Dutch oven, melt the butter over medium heat. Add the halved onion, cut side down, and cook for 3-4 minutes until it begins to brown slightly.
  3. Introduce the San Marzano tomatoes to the Dutch oven. If using whole tomatoes, crush them to achieve a chunky texture. Season with salt and let the mixture simmer. Reduce the heat to medium-low and continue simmering for 20-25 minutes.
  4. Concurrently, cook the spaghetti as per the package instructions, but reduce the cooking time by 2 minutes to ensure it remains slightly undercooked.
  5. Process the cooled oil mixture in a food processor until it’s finely chopped.
  6. Add this blended oil to the simmering tomato sauce, stirring well, and let it cook for an additional 5 minutes.
  7. Discard the onion halves from the sauce. Introduce the slightly undercooked spaghetti to the sauce, allowing it to cook for another 2 minutes until it reaches an al dente texture.
  8. Serve the Spaghetti Pomodoro adorned with freshly grated Parmesan cheese, additional basil leaves, and a drizzle of top-notch olive oil.
