Description

Ingredients

  • 6 cups mixed salad greens (spinach, arugula, romaine)
  • 1 cup roasted butternut squash or sweet potatoes, cubed
  • 1/2 cup dried cranberries or cherries
  • 1/3 cup toasted pecans or walnuts
  • 1/4 cup crumbled goat cheese or feta (optional)
  • For dressing: 3 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tsp maple syrup, salt & pepper to taste

Instructions

  1. In a large salad bowl, combine mixed greens, roasted vegetables, dried cranberries, and toasted nuts.
  2. Add crumbled goat cheese or feta if desired.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, salt, and pepper to make the dressing.
  4. Drizzle dressing over the salad and toss gently to combine.
  5. Serve immediately as a fresh and festive Thanksgiving side dish.

Notes

You can add pomegranate seeds or thinly sliced red onions for extra color and flavor. Dressing can be made ahead for convenience.
