  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 oz) cornbread mix
  • 1 egg
  • 1/3 cup milk
  • Salt and pepper to taste
  • Optional: sliced jalapeños, sour cream, green onions

  2. In a skillet, cook the ground beef with onion and garlic until browned. Drain excess fat.
  3. Add taco seasoning, black beans, corn, and diced tomatoes with chiles. Stir and cook for 5 minutes.
  4. Transfer mixture to a greased casserole dish and sprinkle cheddar cheese on top.
  5. Prepare the cornbread mix in a bowl by combining the mix, egg, and milk.
  6. Pour the cornbread batter evenly over the beef mixture.
  7. Bake for 25–30 minutes or until the cornbread topping is golden and cooked through.
  8. Let rest for 5 minutes, then top with jalapeños, sour cream, or green onions if desired.

Notes

For extra heat, add chipotle peppers or use pepper jack cheese. You can also make this with ground turkey or chicken instead of beef.
