- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chiles
- 1 cup shredded cheddar cheese
- 1 box (8.5 oz) cornbread mix
- 1 egg
- 1/3 cup milk
- Salt and pepper to taste
- Optional: sliced jalapeños, sour cream, green onions

- Preheat oven to 375°F (190°C).
- In a skillet, cook the ground beef with onion and garlic until browned. Drain excess fat.
- Add taco seasoning, black beans, corn, and diced tomatoes with chiles. Stir and cook for 5 minutes.
- Transfer mixture to a greased casserole dish and sprinkle cheddar cheese on top.
- Prepare the cornbread mix in a bowl by combining the mix, egg, and milk.
- Pour the cornbread batter evenly over the beef mixture.
- Bake for 25–30 minutes or until the cornbread topping is golden and cooked through.
- Let rest for 5 minutes, then top with jalapeños, sour cream, or green onions if desired.
- Serve warm and enjoy!
Notes
For extra heat, add chipotle peppers or use pepper jack cheese. You can also make this with ground turkey or chicken instead of beef.
