  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon seasoned salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 1 medium onion, sliced
  • 8 oz mushrooms, sliced
  • 1 teaspoon Worcestershire sauce
  • 1 1/2 cups shredded Monterey Jack cheese
  • Fresh parsley, optional for garnish

Instructions

  1. Preheat a grill or skillet over medium-high heat.
  2. Rub the chicken breasts with olive oil, then season with seasoned salt, garlic powder, paprika, and black pepper.
  3. Cook the chicken for 6–7 minutes per side, or until fully cooked and reaching an internal temperature of 165°F (74°C). Set aside.
  4. In a skillet, melt the butter over medium heat. Add sliced onions and cook for 3–4 minutes until soft.
  5. Add mushrooms and sauté until tender and browned, about 5 minutes. Stir in Worcestershire sauce.
  6. Return the chicken to the skillet or place on a baking sheet. Top each breast with a generous amount of the onion–mushroom mixture.
  7. Sprinkle shredded Monterey Jack cheese over each piece.
  8. Cover the skillet or place the baking sheet under a broiler for 2–3 minutes, just until the cheese melts.
  9. Garnish with chopped parsley and serve warm.

Notes

For extra flavor, marinate the chicken in Worcestershire sauce and olive oil for 30 minutes. Use pepper jack cheese for a spicy variation. Pairs perfectly with mashed potatoes, green beans, steamed broccoli, or rice. Leftovers reheat well on the stovetop or in the microwave.
