- 2 lbs beef stew meat, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 2 cups beef broth
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Optional garnish: shredded cheddar cheese, chopped green onions, sour cream

- In a large pot or Dutch oven, heat vegetable oil over medium-high heat.
- Brown the beef stew meat on all sides, then remove from the pot and set aside.
- Add onion and bell pepper to the pot and sauté for 3–4 minutes until softened.
- Add garlic and cook for 1 minute more.
- Return beef to the pot and stir in diced tomatoes, red kidney beans, pinto beans, beef broth, chili powder, paprika, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1–1.5 hours, stirring occasionally, until beef is tender and stew has thickened.
- Adjust seasoning as needed. Serve hot with optional garnishes.
Notes
For a thicker stew, simmer uncovered for the last 20 minutes. Cornbread or warm rolls make an excellent side for soaking up the stew.
