  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Optional garnish: shredded cheddar cheese, chopped green onions, sour cream

  1. In a large pot or Dutch oven, heat vegetable oil over medium-high heat.
  2. Brown the beef stew meat on all sides, then remove from the pot and set aside.
  3. Add onion and bell pepper to the pot and sauté for 3–4 minutes until softened.
  4. Add garlic and cook for 1 minute more.
  5. Return beef to the pot and stir in diced tomatoes, red kidney beans, pinto beans, beef broth, chili powder, paprika, cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 1–1.5 hours, stirring occasionally, until beef is tender and stew has thickened.
  7. Adjust seasoning as needed. Serve hot with optional garnishes.

Notes

For a thicker stew, simmer uncovered for the last 20 minutes. Cornbread or warm rolls make an excellent side for soaking up the stew.
